Considerable attention was devoted to garden design in the construction of the naturally insulated cellar. Beneath the “step” that serves as the base of the elevated aisle, a gallery was built to house the naturally thermostated cellar for agricultural products. This cellar, measuring 6 meters in diameter and 18 meters in length, was constructed using traditional techniques without reinforced concrete, making it a unique sight. The retaining walls were built with irregular blocks of locally sourced stone from the San Lucido quarry. The two levels are connected by a “tenaglia” staircase, mounted on an arch made of bricks identical in diameter and craftsmanship to those used in the underground gallery within the hill. The naturally insulated cellar, consisting of a thermostated vaulted storage space covering an area of 77 square meters, is utilized for preserving the estate’s own olive oil and wine, as well as purchased products. The construction of the semi-underground storage facility represented an advanced experiment in reducing the energy impact of preserving agricultural and food products. The cellar is entirely vaulted with bricks, without the use of reinforced concrete (to avoid the radiation effects resulting from the Faraday Cage effect created by the reinforcement in concrete structures). The temperature inside the cellar is controlled by the layer of soil that covers most of its surfaces.
